Sounds delicious!! What temp do you like to roast the kale at, and for how long? My husband and I love hi-temp roasted Brussels sprouts (450F) and cauliflower (425F) with just a bit of olive oil and salt -- they come out all caramelized and yummy.

I do the kale rinsed, patted dry, and tossed in EVOO with minced garlic, salt, pepper, and sesame seeds at 375 for fifteen minutes, turning and stirring at five-minute intervals. One of the guys at work makes roasted brussels sprouts that are TO DIE FOR. I've never tried roasted cauliflower though...hmm...
